Disney Cooking: Bringing Home Big Thunder Ranch Treats

Big Thunder Ranch Barbecue was a favorite of many Disneyland guests thanks to the all-you-can-eat barbecue featured chicken, ribs, cornbread, and amazing coleslaw.Even though this wild restaurant closed on January 11th, 2016, you can still bring it’s deliciousness into you home. The following are two of their most famous options:

1. Big Thunder Ranch S’more Bake

Who doesn’t love s’mores bake? The gooey marshmallow, the sweet chocolate, and the dense brownie in this dessert is enough to make anyone yell “YEEHAW!”. It’s so incredibly easy to make and your kids would love to help with the preparations.
Ingredients:
  • 10.5 ounce box of fudge brownies mix
  • 1 pound bag of large marshmallows
  • 1/4 cup plus 2 tablespoons hot fudge sauce
  • 8 graham crackers
How to make it:
  1. Preheat your oven to 375 degrees.
  2. Using a 9×13 greased cake pan, follow the directions on your brownie box. Bake for 20 minutes.
  3. Crush 4 of your graham crackers.
  4. Once the brownies are fully baked, place your marshmallows over them, and then place entire pan under the broilers. You only want to broil them for about 2 minutes. You don’t want to burn them.
  5. Drizzle hot fudge over the brownies and sprinkle the graham cracker crumbs over the top.
  6. Place the remaining graham cracker planks into the marshmallows.
2. Big Thunder Ranch Barbecue Cornbread

Cornbread may not be a diet food, but it is delicious. And nothing says western Americana like cornbread. The recipe called for a thinner bread but I made mine into a loaf. This bread is perfect for any family event.
Ingredients:
  • 1 cup granulated sugar
  • 1/2 cup salad oil
  • 2 eggs, large
  • 1 tsp pure vanilla extract
  • 2/3 cup milk
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/3 cup milk
  • 1/2 cup Cornmeal
How to make it:
  • Preheat your oven to 375 degrees.
  • In a large bowl, combine sugar, oil, eggs and vanilla extract. Mix well.
  • Add 2/3 milk. Blend well.
  • Add baking powder and flour to the bowl. Again, mix well.
  • When blended well, add remaining milk and cornmeal. Mix well.
  • Using a 9×13 pan, pour mixture into the pan and bake for roughly 25 minutes.
